Overnight Oats

Apple Cinnamon Sweet Potato Overnight Oats

Overnight Oats: for a breakfast that is fast, easy, nutritious, and yummy! Plus, you can top it with any ingredients, so the possibilities are endless. Here is one of my favorite ways to make them:

Step 1: Peel, chop and boil your sweet potato! Once it’s tender, mash until smooth. Add a bit of butter and milk (I used a heaping tablespoon of coconut oil and some coconut milk) – no exact amount, just not too runny. Season to taste. (I added ~1 tbsp. brown sugar and 1/2 tsp cinnamon).

Step 2: In your container, add your oats. I used 2/3 cup old fashioned oats plus ~1/2 tsp cinnamon, around 2 tbsp. of brown sugar, and 1 tbsp. chia seeds.

Step 3: You will add an equal amount of liquid as oats, so I mixed in 2/3 cup coconut milk. Add more toppings if you like! In all 3 jars I added about 1/3 cup of sweet potato mash and a bit of chopped apple (I like Gala). Put the lid on and refrigerate overnight.

You can enjoy this hot or cold. I like to add in more apple or berries and nuts.

Substitute sweet potatoes for banana, applesauce, peanut butter, yogurt, or……

H 2 Oh yeah!

In an effort to drink more water, I decided to try some flavored water recipes!  I’m going to try some fresh and frozen fruit along with mint and rosemary from my garden.

Strawberry, mango & mint:

Lemon, orange, peaches, rosemary:

Toss fruit in water, bruise herb leaves to release flavor and add.  Steep in the fridge overnight for stronger flavor, and enjoy!  :-d

Smooth

I think I finally have figured out how to properly integrate my self-hosted site with my WordPress app. I lost my old blog posts, but at least I still have a few of the themes that I had created years ago, including this PB&J one!  This post is to test adding photos, because that was not working correctly when I logged in remotely to WP via my directory without the app.  If the app works, I will be celebrating with this fruit smoothie
